Equilibrium at Capitol Piazza

“Supply + Demand = EQUILIBRIUM!”

That was the answer offered to me by Jacelyn, when I asked about how they came up with the name of the restaurant. And if the first part of the equation sounds familiar, it’s because Equilibrium, a new restaurant in Capitol Piazza, belongs to the Cre8group, which also owns Supply & Demand (Orchard Gateway/Esplanade), and another upcoming joint, The East Bureau (opening in September, at Marina Square)!

I’d like to think that it was fate that led me to have met the acquaintance of Jacelyn. I lost my engagement ring at Supply & Demand without knowing, and the honest people there actually kept it for me. I was forever grateful since! Of course there was a mutual friend who brought us to Supply & Demand in the first place lah, but you know, I paid for my food all the times I’ve been at Supply & Demand, so you know for sure that it’s nothing to do with sponsorship or anything. She didn’t even know that I blog till recently!

Equilibrium is located at Capitol Piazza’s Galleria Wing at #01-86 (Capitol Piazza has 2 wings) where plenty of restaurants/cafes are located (Dazzling, Angelina, 1933, Zakku) – if you feel lost, click here to access Capitol Piazza’s directory online.

I can’t put a finger to the furnishing style, but it’s somewhat similar to how Supply & Demand feels – warm and cozy, like home away from home, with loads of dark wood furnishing and plenty of green accents for this one. Plenty of cushions, too! (Which I heard they had to cut down on because space hahaha)

Right next to the entrance, there’s a drinking bar with a great variety of liquor for your bespoke cocktails if you wish, handcrafted by their passionate bar team! Bet this will keep you happy if you’re just looking to get imbibed – I reckon this will be an extremely hot tippling spot once the 6 star hotel right next to it opens!

There’s a second level to this place, as you would have noticed – stairs only access for now, but it’s really brightly lit (awesome for food photography and if you want to see your date’s face clearly) and spacious enough to hold around 16 pax comfortably!

I reckoned that since it’s a relatively new and uncrowded spot, it’ll be perfect for girly gatherings and arranged for some of my favorite girls to gather for Jayne’s belated birthday celebration!

I was running a bit late due to a prolonged hair appointment, and when I arrived this was already on the table. I took a swig thinking it was tea, and realized it has vodka in it! The Sencha Apple, $17 is a "delightful conconction of sencha infused vodka, honey, apple sour liquer, fresh mint leaves and dehydrated apple slice". Had I not driven, I would probably finish this off! It tasted so yummy!

But since I drove, I had to settle for The Earl ($8) instead. A generous glass of iced Earl Grey Tea, mixed with a hint of rosemary, yuzu and syrup. I asked for it without syrup cos I like my tea that way, and it still tasted really nice! I think I love anything earl grey and yuzu basically XD

The girls were waiting for me to begin and I felt so bad holding them up! We quickly began with the starters… (man, wooden table + wooden tableware + canvas / rope. I’m sold on this place)

The Caesar with Salmon ($15) - classic caesar salad with sliced smoked salmon, crunchy romaine lettuce, garlic crostini, crispy bacon bits (!!!), shaved grana padano cheese with sous vide egg and homemade dressing on the side! I don't eat much salads so this really is the first time i've seen a salad served with dressing on the side, and with a sous vide egg yet! This one was so yummy, I could probably wipe the entire serving off myself!

I have no idea how they manage to roast it, but I know that the herb infused chicken leg is in actual fact, cooked a la sous vide (controlled temp cooking for a long period of time) and that's why it's so tender, juicy and also a little pink (it's not undercooked, just tends to be this way cos it's cooked sous vide). Also did I mention how much I loved the accompanying sauce , potatoes and sauteed vegetables? YUM!

Oh boy, stuffed to the max! And the night only got more interesting as we were introduced to their very own pastry chef, Belinda, whose dedication to her craft and quirky ideas made me feel like she’s gonna be the next Janice Wong.

Guess what these are? The bunch of grapes and promegrande seeds you see were the only normal item on the wooden plate, made to look more like a meat platter than a dessert dish. Deli Dolce, $21 SGD. Next to it - Chocolate Salami, on the bottom left - Raspberry & Green Apple Prosciutto which felt like pulled jelly taffy, Whisky Caramel Jelly & Bacon Jam which was really heavy tasting, and the spam lookalike Milk Chocolate & Caramelized Onion Pate. As it turns out, Belinda is a pastry chef who... prefers savoury stuff. And hence the very interesting dessert dish! I'll still prefer sweet stuff anytime, but It's really fun to explore each and every bit with your girlfriends and watch their expression as they try it. XD

Hello, Panna Cotta Nascosto ($14 SGD). I savoured this without asking what it was and it was DELIGHTFUL! What you get is blood orange crushed ice sitting atop a bed of almond milk panna cotta, with cocoa water jelly seperating the two. It tasted nothing like the chinese almond jelly (you know, the ones at buffets...) you would have thought of - instead, every bite was delightful due to the different textures and taste layers. We gobbled this up in no time!

BAM! Tapas Sake Bar at Tras St, Singapore

It was the husband’s 35th birthday on the 23rd of Sept, and I was stumped about where to go. He’s not exactly fussy, but he has a very discerning palate and his commentary about food can earn him a top food blogger award already, except that… he doesn’t have a food blog. Hahaha.

He LOVES Spanish food – and I don’t mind (although, give me Japanese anytime), so when a friend suggested BAM! Tapas Sake Bar, I thought “Aiyah why not?  Sounds like a perfect marriage – and it’s his night!”. Made a reservation at 6 (that’s when they open) for 730pm, and thank god I did, cos the restaurant was filling up fast right after we were seated!

BAM! Tapas Sake Bar is pretty near one of our favorite dining spots (Teppei Japanese Restaurant) and it wasn’t hard to find – just a little hard to park if you’re in heels and need to park nearer to the restaurant (it’s along a row of shophouses). I was wearing sensible shoes (and always have backups in the car) so we opted to walk from Orchid Hotel, where we parked.

Menu looks a bit confusing huh? Basically it’s more of X + Y, served with Z. So Calamari + Otah, served with mint something. You can take a look at BAM!’s full and latest ala-carte menu online here.

They also have Omakase ranging from $150 – $190, and set lunches for $38++!

We wanted to get the Suckling Pig served with Paprika & Violet Mustard ($78), and it takes 45 minutes – so if you’re going for this, please order it right after walking in, haha.

BAM actually pairs sake with your food - and for this, they have an excellent selection of sake all housed in this glass cellar which stands out (it's practically placed to make you stare haha) the minute you enter!

I love sotong though and this one, stuffed with otah like a Japanese Ikameshi (squid stuffed with rice) was DELISH! Wish they had bigger portions of course, but this was tapas and you aren't expected to be full with just one dish.

Cod Fish 'Tripe' Fritters, Iberico XO ($14) The prettiest dish of the night and supposedly a delicacy that's hard to find even in Barcelona, but unfortunately not my cup of tea. It's not bad, but really just not my preference! It's actually the bladder of a fish and tastes chewy. It's also known as the fish maw but the fish maw that we are used to is of a totally different texture.

Total bill for the night came up to $200 odd – some people may balk at the price tag, but it’s tapas, and in Barcelona you typically order a few dishes at one go anyway. AND IT’S GOOD! Chef Pepe was fantastic, and had us contemplating coming back for omakase after watching the next table get served one delicious dish after another! Makes me miss Barcelona and Japan at the same time, this place.

Huatians’ XMAS ’14 dinner at 49 Seats!

I don’t even remember how it started, but a group of me and my husband’s mutual friends are called the “Huatians”, because our group chat is called… “Huat Chat”. I think it was when everyone was still going “Huat ah!” for everything haha.

But anyway, I’ve enjoyed this group’s company even before we got married, and wow, it’s been a good 4-5 years! Christmas gatherings are no exceptions for this group and we crack our heads on where to go because this group is pretty huge. Quite fortunately for us, 49 Seats saved us by offering to host all 12 of us at their newly opened Orchard Central outlet!

49 Seat’s newest outlet, ironically, is much bigger than their Kreta Ayer one and has a total of 88 seats instead! And with the #08-08 unit number it’s like double the “huat”! But the tables, chairs, and the look from their main outlet has been kept very much the same here!

The Alscampi sauce (which was gone in a FLASH) contains seasfood - two whole shrimps, clams, and a mussel! DA YUM.

Chicken Chop with Mushroom sauce was what I ordered, and I LOVE IT! Super yummy and the pasta went nicely with it too (I need carbs. CARBS)

I don’t usually eat chicken, but some how I felt like I could do with some chicken that day and I got the Chicken Chop with Mushroom sauce – I LOVED IT! Chicken was tender, the sauce was really good, and it was served with a serving of pasta at the side (yes yes me love carbs!).

Every year we also do a secret santa gift exchange and it is quite possibly the most fun part of the christmas gathering > : D BECAUSE WE GET TO TROLL ON OTHERS. (Basically, secret santa means that whoever you’re buying for dont know that you’re his santa).

We gathered the gifts with name tags and… threw them into a garbage bag on the floor LOL. Damn winner, I know!

Make-A-Wish is a global foundation with affiliates in many countries, and grants wishes to kids with life-threatening medical conditions between the age of 3 – 18. For the past 11 years, Make-A-Wish Singapore has granted over 1000 wishes, and they believe that it takes away the family and child’s pain temporarily and helps them to look forward to an exciting venture in their life.

I know 49 Seats could have picked any other charity, but this one struck home, because I’m witnessing the pain my dear friend, Anne, has gone through for the past year after her baby was diagnosed with a heart condition since birth, and not just one that could be fixed by surgery (how we wished it was that simple). Guiltily, I haven’t visited much – I am so sorry, AnneAnne! Noah is now ONE, and I hope one day his wish can be fulfilled by the Make-A-Wish foundation too! GO, NOAH!

Please donate or volunteer your time to the Make-A-Wish Singapore foundation if you’d like to this Christmas, and hopefully together, we can put smiles on more children’s faces!

It’s probably hard for anyone to believe but… I have never stepped inside Chijmes before in my entire 29 years of living in Singapore. *gasp* If it wasn’t for Nuffnang’s Bloggerati and 8DAYSeat, I probably never would have known what a foodie’s haven Chijmes is!

First off, did you know that the mural in Chijmes, located right outside the restaurant Tatsu was painted (and then blown up) by local artists? ; ) Kudos to Parka and his friend Issac for the beautiful artwork!

I’ve loved reading 8DAYs since I was young – EVERY WEEK, haha! Their headlines always grab me and their interesting articles are always well-written with a dash of great humour, frank and more helpful than many other magazines and in the recent years, their eat section has been expanding – which lead to the development of 8DAYSeat App (available for both iPhone and Android), where you can find a directory of the local eateries they’ve reviewed, with their candid and honest opinion. The crowd meter is a very nice addition to the app, but we definitely need more people using the app! Download it now pleaseee so that we can put the crowd meter to some good use!

we got to work pretty fast! I love it when people serve food fast and all at one go because then we don't have to wait OR make people wait. I actually really like taking pics and getting it over and done with so that we can still eat warm, nice food!

We had to move around pretty fast so I didn't get to taste all the food, but the Truffle fries here are a must try! They're a little salty, but oh so good!!!

Hakata ramen is my favorite – delicious tonkotsu broth and straight, thin noodles, like the ones from Ippudo! Prices start at S$5 for Gyoza (5 pieces) to $12++ for a bowl of basic Tonkotsu Ramen (without the egg) and $14++ for a bowl of Ajitama (that half-cooked egg) Tonkotsu Ramen, which i find to be quite reasonably priced.

I was really looking forward to trying this place out but I didn’t get much time here nor was I able to get a good picture (must be really good – everyone finished their food so fast!), so I’ll definitely return to try it out!

Senior Chef Kelvin put up a spectacular show of lobster  grilling and knife throwing - and seasoning canister tossing, much to our (camera's) delight. It is quite the visual feast, but be warned that you will walk out with a cooked food smell on your clothes and hair!

Live Lobster - in special sauce! So well cooked, and as if it's not fragrant enough, it's served with a serving of fried shallots to accompany at the side!

Other than the lobster dishes, Tatsu also serves Beef and an array of other dishes for Teppanyaki – you can view their menu on their website or refer to 8DAYSeat App for user reviews on the place! I missed out the Grade A4 Flambe Wagyu Beef and I heard it was really good. Right now I am just really sad about missing out on all the good bits! And yes, I’M COMING BACK FOR TATSU FOR SURE.

Collagen Hotpot! I guess it's not so uncommon in Singapore anymore - since we're such lovers of steamboat, why not one with added beautifying benefits? Couldn't hurt that this didn't taste much different from the typical Japanese nabe as well!  p.s. I've heard from the foodies at the table that the soup for this one isn't as thick or starchy feeling as the other restaurants serving collagen hotpots!

Shirokiya obviously doesn’t just serve steamboat / hotpot – just check out their website to go through their EXTENSIVE menu! I love places which upload their menus on the website and Japanese ones always tend to be so interesting, and the pictures are so well taken too!

Sometimes I chuckle to myself when I read Japlish – no offense please, it’s really cute to me! This particular joint is owned by 2 Japanese bosses… which actually speak better Chinese than English! This is not their first outlet – they have a total of 3 restuarants with slightly different concepts – Oyster Bar & Grill at Robertson Quay, Oyster Bar & Sushi in Sentosa and this one’s a Oyster Bar, Wine & Dining place! Actually it’s rather obvious by the restaurant names I guess, the common denominator is that they all serve Oysters – check out the different outlets’ offerings and all at their website!

We actually went back again and tried out their other dishes - I loved the Paella, which was done really well! The rice was just nice, not too salty and complimented the seafood well. Prawn trio, and my Prawns & seared Scallops dish which was seasonal - it's till Nov 30th! I'm really happy with this dish because it was served with SWEET POTATO!

Did I mention that they serve 100 different kinds of Mojitos? This is Iji-san proudly showing us the wide variety they have - I'm super impressed with the menu because they have meters showing you how dry / sweet the wines / mojitos are! I found that a very nice touch for the people who are unaware.

The food trail has ended but I find myself considering the restaurants in Chijmes for my dinner sessions these days! There are just SO many choices there and all the restaurants are so nicely decorated! I was thinking of bringing my parents to Lei Garden Restaurant, or even On-Yasai. My dad loves Japanese food but my mom prefers Chinese and doesn’t take raw fish, so actually Shirokiya isn’t a bad choices too… Ahhh deciding where to go is a difficult thing itself hehe. It’s a little more quiet on weekdays I believe so you can have your lunch/high tea in peace, and a little more crowded during weekends but the parking was still easy enough for me.

I was running around in the Daeshia striped shirt dress from Love, Bonito that day! I think Chijmes is especially beautiful at Sunset, against the lights at Prive restaurant… Thank you Ron for helping me take these pictures ; )

The establishment spans over two units styled like an American diner with its red cushioned seats but with a slightly modern update as the details at the bar’s kept simple – the bar counter’s spacious and the seats are set apart comfortably enough for you in case you need some arm space to tackle your lobster.

The bar is well stocked and they offer a pretty good selection of drinks! I was driving, so I went for the mocktails instead – between the 5 of us, we had Crabbie’s Spiced Orange Ginger Beer, Melon Soda, Freddie Mercury, and the Duxton Mule – every single drink tasted really good and I loved mine especially, which was a mix of Cloudy Apple, Ginger & Mint!

Branding for Pince & Pints’ really pretty and it was made to resemble a lobster cage for the food menu and a lobster crate for the drinks menu!

Despite the extensive drink menu, there are only 3 mains offered when it comes to food – you can choose to have your lobster done either:

  • Live Whole Lobster
    (Choice of Grilled or Steamed, comes with Mesclun Salad, Sour Cherry & Balsamic Dressing, Shoestring Fries & Herbed Butter Sauce!)
  • The Lobster Roll  
    (Comes with Mesclun Salad, Soury Cherry & Balsamic Dresing & Shoestring Fries)
  • Chilli Lobster
    (Served in Homemade Fresh Tomato & Chilli Sauce and Fried Mantous on the side)

“Each dish uses 1 whole live wild-caught lobster of approx 600g.”

And no joke. The lobsters were H-U-G-E!

Presentation of the lobster roll probably looks tiny as compared to the the other dishes, but you can be sure that they use the entire lobster in it – this is a good dish to order if you don’t wanna get down and dirty like me.

Grilled or Steamed? Don’t expect the grilled one to be dry – this one was so succulent and juicy that you can see it oozing out as you drive your fork into it. I’m sure the dip was excellent, too!

And my order, the Chilli Lobster.

Everyone kept referring to it as the Chilli Crab by a slip of tongue the entire night because of the sauce it came swimming in – it was the perfect blend of tomato and chilli, not too spicy, but more tomato savoury sweetness which goes so well with the lobster – I guess I’m a very typical Asian – I don’t mind it being a little spicier but why spoil the taste of fresh lobster, right?

You get 5 mantous on the side for this Chilli Lobster dish which was just the perfect number – AHHHH I MISS IT SO MUCH RIGHT NOW!

 

I love the sauce so much that I nearly drank the entire claypot bowl of it! By comparison, this one appeared to be the largest and I was thankful for the spacious bar counter which allowed me to comfortably space out my drinks and two side plates without knocking anything over or elbowing my friends as I manoeuvred the lobster!

The chefs behind your delectable lobsters!

I must say, their service staff were all super smiley and cute – attentive and bright-eyed + eager to help! And thank you so much too, Fred, for making sure that we were well taken care of – and special thanks to Vel for the helping me arrange for seats even though you were really packed! (Man, business’ alraedy good even before the official launch!)

At $48 each dish (before service charge & gst), I find it really well priced for a full sized, wild lobster – and the drinks are not of unreasonable prices, too (our mocktails were all $7)! I can safely speak for all of us when I say that EVERYONE enjoyed the meal, and we’ll definitely be back for more!

Parking is easy if you’re early (open air carpark had plenty of lots when I was there at 6+!)
but be prepared to scour the area if you’re there at about 7.30 – 8pm.
